Pineapple UpsideDown Protein Muffin

Hello lovely readers, Sweet Tooth Fairy here with another guilty free recipe for you to enjoy whenever you want.

Serves one person= 4 muffins

Ingredients:

- 56g of Protein Pancakes (I used Flap Jacked)

- 1 scoop of protein powder (I used FitMiss Chai Vanilla)

- 1 egg

- 20 grams (1 serving) of Smuckers Pineapple preserve

- 1/2 tsp on baking powder

- 1 tsp of vanilla extract

- 2 tbsp of Xyla natural sweetener

- 1/2 cup of water

Mix all the dry ingredients together then add the egg, the vanilla extract and mix it all together, then add start adding water until you get the consistency you want. Finally add one serving of pineapple preserve to the batter and some baking spray to the muffin pan. Pre heat the oven to 400F cook for 20 minutes or until is fully cooked. Enjoy guilt free!
